Recipe of Speedy Shukto

The ingredients needed to make Shukto:
- {Take 1 of Raw banana.
- {Take 2 of Drumsticks.
- {Get 1 of Eggplant.
- {Take 1 of Bitter gourd.
- {Make ready 10 of Daaler bori.
- {Prepare 1 of Potato.
- {Take 1 of Raw papaya.
- {Get 1 cup of Milk.
- {Prepare as required of Water.
- {Make ready 1 tbsp of Turmeric powder.
- {Take as per taste of Salt.
- {Make ready 1 tbsp of Yellow and Black mustard seeds.
- {Prepare 1 tbsp of Poppy seeds.
- {Take Pinch of grated ginger.
- {Take 1 tbsp of Panch phoron.
- {Prepare 2 tbsp of Ghee.
- {Prepare 1 of Bay leaf or tej patta.
- {Make ready 1 tablespoon of sugar.
- {Prepare 1 tbsp of Radhuni (compulsory).
Instructions to make Shukto:
- First cut all the vegetables into pieces. Put the raw banana pieces in water mixed with a pinch of turmeric powder..
- Make the paste of mustard seeds adding green chillies and a pinch of salt to avoid it's bitterness..
- Also make the paste of ginger and keep it aside. Then make the paste of poppy seeds..
- Take a kadai. Pour oil on it to fry the pieces of bitter gourd separately adding turmeric powder and salt. Fry till the pieces turn crispy a little bit. Then take out the fried pieces and keep it aside..
- Fry the dal boris in the oil. You will get the daal boris at any grocery store. Here in Bengal, women make daal boris at home and store it. They use these boris for cooking in vegetables and fish..
- Then mix turmeric powder and salt with the banana pieces and potatoes. Fry them and keep it aside..
- In the same kadai add 2 tablespoon of mustard oil. Let it heat. Add bay leaf and panch phoron. As it crackles add randhuni. Stir it then add one dry red chilli which is optional. You may add the dried red chillies..
- Then add rest of the vegetables except the fried ones. Saute for a minute. Then add a pinch of turmeric powder and ginger paste. Add salt for taste and stir fry the vegetables. Then add water to cook..
- As the vegetables start tempering add mustard paste. Saute it. Then add poppy seed paste. Then fry for a while. As the water starts drying add a glass of milk. Temper the vegetables in it. Then add the fried ones - daal bori bitter gourd fried pieces and banana and potato fried pieces in the kadai. Add one tablespoon of sugar to make it sweet but not so much sweeter. Add salt and splitted green chillies. Let the vegetables boil..
- At last when the curry becomes thick add one teaspoon of ghee. Stir the vegetable curry. Now it is ready to be served..
- Switch off the gas. Serve this vegetable dish with hot rice..
