The ingredients needed to make Kajjaya/Adhirasam:

  1. {Get 1 cup of raw rice(1cup water glass).
  2. {Prepare 1 cup of powdered jaggery.
  3. {Make ready 1 tsp of sesame seeds.
  4. {Take 2 tsp of poppy seeds.
  5. {Take as needed of water to melt jaggery.
  6. {Prepare 1/2 tsp of cardamom powder.
  7. {Prepare of as required oil/ghee as required for deep frying.

Steps to make Kajjaya/Adhirasam:

  1. Wash and soak rice,preferably over night..in the morning drain water and spread on the clean cloth& let it semi dry.
  2. Grind in a mixer grinder in two batches to a fine powder, sieve the flour, press it and cover it so that flour does not get dry need to maintain that little moisture.
  3. Now take powdered jaggery in a deep pan add enough water just to immerse jaggery..on medium flame cook it keep stirring until you get one string consistency..turn off the flame..add powdered rice flour to it bit by bit keep stirring...you get soft dough texture..cool and cover it..let it sit for 5-6 hours or over night...
  4. Next day to this dough add remaining ingredients poppy seeds, sesame seeds, cardamom powder (you can also add handful of grated coconut optional) grease the butter paper or polythene sheet or banana leaf, pinch a small ball sized dough pat and flatten to form a slightly thick disk.
  5. Take out gently deep fry them on medium flame, keep splashing oil on top so that it gets cooked evenly, gently turn over to the other side fry both the sides until golden and crisp, do not fry too much else it will turn dark.
  6. Enjoy your delicious dessert (it absorbs little more oil you can press lightly with tissue paper to get rid of extra oil..and enjoy.
  7. Note:1)you can also press them between two big spoons to remove excess oil but it would not be that tasty, choice is yours..2) one string consistency of the syrup is most important,its just one string consistency when it starts to form immediately turn off the flame and add flour...
